Bikini Recipe

Makes enough for 10 people

Ingredients for the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Premix (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

Making the Syrup: Put the listed ingredients into a saucepan, bring to a light boil, mixing so the sugar melts. Next, remove from the heat and leave to cool down entirely. Pour into a sterilised bottle, seal and refrigerate it in the fridge, where it will keep for about four weeks.

To make Cocktail Base: Mix the specified liquids in a sizeable container, let it rest for an hour, then strain best through cheesecloth, to ensure it's fully clarified.

To serve: Add 85ml of your premix to a cocktail shaker filled with ice, gently stirring carefully for about 60 seconds until cold. Filter into an cold coupe glass or a similar vessel, decorate with the cranberries and finish with a quick spritz with the mandarin essence over the top.
